What A Souper Wife!!


Hannah has been holding up well under the conditions of things. Probably the biggest struggle has been some of the food. The last time we were in Honduras we had a lot of good food, however this time, the cook has a little bit of a different taste. Our first Sunday here, we had a soup called " Mondongo ". We aren´t totally sure but we think part of the ingredients was cow stomach. It was like globs of rubber. The soup she is eating in the picture she actually liked and it was one of the better meals.

She is still struggling with morning sickness but all in all she is doing great. She loves the people, some have even asked her if she was a Honduran. She looks like a Honduran and before long she will even talk like a Honduran. She is studying hard and little by little she is learning more and more Spanish. What a souper wife!

Mondongo (Beef Stomach Soup)

Mondongo is made of high quality beef stomach skin. It is tasty and highly seasoned.

Servings & Preparation Time

Makes 4 servings

Preparation time: 3 ½ hours

Ingredients

5 lbs beef stomach, thorough rinsed and cut into 1 ½ inch and 2 inch wide and 2 inch long stripes

2 teaspoons fresh ground oregano

4 bitter oranges

5 cloves garlic, minced

2 red onions, chopped

5 baby tomatoes

1 bay leaf

1 teaspoon pepper

1 teaspoon basil, chopped

Salt to taste

Ground parsley taste

Method

Season beef stomach with salt, ground parsley, bay leaf, pepper, basil, and garlic in a saucepan. Add water until beef is completely covered. Bring to boil over medium high heat. Boil for 3 hours until beef is tender. Add baby tomatoes, red onions. Continue boiling for one more hour.

Serve in a bowl with a side dish of rice.

Note: When cleaning beef stomach skin make sure all green residues are completely rinsed off.
